Chocolate Chip Banana Bread

- 140g unsalted butter (softened, plus extra for greasing)
- 140g golden caster sugar
- 2 eggs (beaten)
- 1 tsp vanilla extract
- 140g self-raising flour
- 1 tsp baking powder
- pinch of salt
- "3" ripe bananas (peeled and mashed)
- 100g chocolate chips
Instructions
1. Prepare
- Heat the oven to 180°C/160°C fan/gas 4.
- Butter a 900g loaf tin and line the base and sides with baking parchment.
2. Make the Batter
- Beat 140g unsalted butter and 140g golden caster sugar together using an electric whisk until light and fluffy.
- Combine 2 beaten eggs and 1 tsp vanilla extract. Pour into the butter mixture a little at a time, mixing between each addition.
- Fold in 140g self-raising flour, a pinch of salt, 1 tsp baking powder, 3 mashed bananas, and all but a handful of the 100g chocolate chips.
3. Bake
- Scrape the mixture into the prepared tin and scatter the reserved chocolate chips over the top.
- Bake for about 50 minutes, or until puffed up and cooked through — a skewer inserted into the middle should come out clean.
- Cool in the tin for 10 minutes, then transfer to a wire rack and leave to cool completely before slicing.
- Note: Will keep in an airtight container for up to five days.
