Chocolate Chip Banana Bread

1. Prepare

  1. Heat the oven to 180°C/160°C fan/gas 4.
  2. Butter a 900g loaf tin and line the base and sides with baking parchment.

2. Make the Batter

  1. Beat 140g unsalted butter and 140g golden caster sugar together using an electric whisk until light and fluffy.
  2. Combine 2 beaten eggs and 1 tsp vanilla extract. Pour into the butter mixture a little at a time, mixing between each addition.
  3. Fold in 140g self-raising flour, a pinch of salt, 1 tsp baking powder, 3 mashed bananas, and all but a handful of the 100g chocolate chips.

3. Bake

  1. Scrape the mixture into the prepared tin and scatter the reserved chocolate chips over the top.
  2. Bake for about 50 minutes, or until puffed up and cooked through — a skewer inserted into the middle should come out clean.
  3. Cool in the tin for 10 minutes, then transfer to a wire rack and leave to cool completely before slicing.
